 The "Golden Grain" of Immunity

Organic Proso Millet, known locally as Chenna or Barri in Hindi (and Vari in Marathi), is one of the oldest and most nutritious ancient grains known to mankind. Unlike refined grains, this millet is a superfood often cultivated in the dry, pristine regions of India where it grows naturally without heavy irrigation or synthetic inputs.

This millet is distinct because of its short growing season and ability to thrive in harsh climates, which concentrates its nutrient density. It has a beautiful golden-yellow color and a slightly nutty flavor that blends perfectly into traditional Indian cuisine. It is completely gluten-free and is famous for its high content of Lecithin, which supports neural health.

Key Features

  • Taste Profile: Mild, nutty, and earthy. It absorbs flavors well, making it excellent for Pulao or Kheer.

  • Texture: Fluffy and separate when cooked (similar to quinoa or high-quality rice), but with a pleasant grainy bite.

  • Health Powerhouse: Known as the "Beauty Millet" because it is rich in antioxidants that support skin health. It is also excellent for strengthening bones due to high magnesium content.

  • Specialty: It contains Lecithin, a nutrient rarely found in cereals, which helps strengthen the nervous system.

Culinary Uses

  1. Chenna Upma: The most popular breakfast dish. It cooks faster than wheat rava and is much healthier.

  2. Millet Pulao: Use it exactly like rice. It stays fluffy and non-sticky, making it perfect for lemon rice or veg pulao.

  3. Kheer/Payasam: Its creamy texture when slow-cooked makes it a delicious dessert base.

  4. Breads & Rotis: Can be ground into flour and mixed with other attas to boost nutritional value.

Cooking Tip for Chenna/Barri

Soak it! Although it cooks fast, soaking the millet for just 15-20 minutes before cooking ensures the grains fluff up perfectly and increases nutrient absorption. Cook with a water ratio of 1 cup Millet : 2 cups Water.
